SEA KALE-REVISED

WHAT
A research project that combines coastal engineering with saline agriculture, re-introducing a forgotten vegetable with the reinforcement of the Dutch Afsluitdijk dam.

WHY
Where most plants die in cold salty sea winds, sea kale flourishes; this protected species grows naturally along the coastline. Mathilde Nakken developed an innovative breeding programme that celebrates this taste of Dutch heritage. Moreover, it calls attention to the global need for saline farming.

HOW
A new concrete structure strengthens the dike and at the same time provides ample growing ground for this primeval plant. Underneath the lids, tasty sprouts grow in the dark. Visitors can cut these, or the kale’s flower buds, at harvest feasts and tours — or try them at local restaurants.
